Healthy Maple Pecan Apple Bread

Eating healthier may sound like a hard thing to do. Why eat tasteless, bland food when you can have healthy and flavorful bliss? Truth is, you can make healthy foods into delicious snacks. Our friend Jenny Chen has shared with us her recipe for Healthy Maple Pecan Apple Bread made with our Maple Pecan Hazelnut Butter. This amazing bread is quick and easy to make and packed with nutrients. Not to mention, super delicious. This bread is moist, tastes like banana bread, but is full of tart apples and contains a crunchy crisp granola sugared topping. To make it even healthier, substitute the sugar with honey or coconut sugar. You can even swap Greek yogurt with applesauce to keep it moist and provide a little boost of sweetness. Ingredients 

Bread

  • 1/2 cup Greek Yogurt

  • 1/3 cup Sugar

  • 2 tsp Vanilla Extract

  • 1/3 Cup Maple Pecan Hazelnut Butter 

  • 1 large Apple (choose a tart apple), chopped to small pieces

  • 1 ripe Banana, mashed

  • 1 1/2 cups Whole Wheat Flour

  • 1 tsp Baking Soda

  • 1/4 tsp Baking Powder

  • 1/4 tsp Salt

  • 1 tsp Cinnamon

  • Handful of crushed walnuts or pecans (optional)

Topping

Directions

  1. Cut the apple into small chunks or use a grater to grate the apple into fine slices. Mash the banana* with a fork and set aside for later.

  2. Combine all of the wet ingredients, apple and banana together in a large bowl.

  3. In a medium bowl, combine dry ingredients and set aside.

  4. In a small bowl, mix all of the topping ingredients together.

  5. Slowly add the dry mixture in 2 separate parts to the large wet ingredient bowl, folding gently. Immediately transfer into a greased bread pan and top with crumble topping.

  6. Bake at 350°F for 50-55 minutes (or until the toothpick comes out clean). Cool completely.

  7. Enjoy!

Notes: This bread can be stored (wrapped up in foil or plastic wrap) for up to a week, but good luck even getting it to last that long!
